The fire
Everything passes through the embers
We light the charcoal every morning and let it take its time. We do not cook over flames: we cook over mature embers, at the temperature each cut asks for.
Slow roasting and the grill define everything that leaves the kitchen. The produce arrives whole, is cut here and is respected: salt, fire and time. Nothing else.
Dry-aged beef
Galician beef aged in our own chamber. Cut daily and seared over oak charcoal.
Malpica fish market
Fish and shellfish come up from the Malpica market according to the auction of the day.
Seasonal vegetables
Produce from the surrounding farms, slow-roasted or finished on the grill at the end of service.

The setting
We are not just anywhere
The estate covers 38 hectares of pine forest with four motor circuits spread among the trees. Right in the middle sits the grill house: stone, weathered steel and a chimney that never goes out.
Weddings, communions and company gatherings
Banquet halls and a marquee for up to 200 guests within the estate.
